Onion is a pungent edible of the lily family. It is considered a food of exceptional value for flavoring and seasoning. The germination of onions is slow at 6 to 7º, the optimum germination temperature range is 10 to 35º, and the maximum temperature is 40º. There are two varieties of onion, white and red. They are now available in fresh, pickled, canned, caramelized, powdered, chopped, frozen, and dehydrated forms. Dehydrated onions, onion flakes, kibbled onion and onion powder are used for flavoring ketchups, sauces, even pickles. The fruit is a globular capsule. Leaves are long, linear and hollow. A bulb is formed by thickening of the leaf bases when the plant reaches a certain stage of growth.

 

Green Onion - Also called scallions. These small, young onions are harvested when their shoots are still green. They can be good chopped and used as decoration in soups, salads and other dishes

 

Vidalia onion -Also known as Yellow Granax . This onion is from Georgia that can be used in salad, soup, sliced and eaten on a sandwich instead of meat.

 

Red Onion - Also known as purple onions. These colorful onions are often used in salads and on the barbecue.  They can be cooked and added to other recipes.

Yellow Onion - have a brown skin and white flesh. Yellow onions are usually not very flavorful but they're used in soups and many different recipes. . Yellow onions are quite inexpensive.

 

Tree onion - Also known as Egyptian onion, top onions, walking onions or winter onions, Produce bulblets in the flower head, these onions are very strong flavored

 

Sweet onion - sweet onions have higher water content and much lower sulfur content
