Hi  friends in this article let us see the preparation of three different kinds of puri.

1.DAL PURI:

Ingredients:

Moong Dal ½ cup  
Gram Dal ½ cup
Whole wheat flour 1¼ cup.
Cloves 4 nos.
Peppercorns 8 nos.
Cardamoms 3 nos.
Cumin seeds ½ tsp.
Ghee 3 tbsp + to deep fry.
Salt to taste

Directions to cook:

step1 First Soak both the dals overnight.
step2 The next morning drain off the water and grind to a fine paste.
step3 Grind the cloves, peppercorns, cardamoms and cumin seeds.
step4 Heat 1 tablespoon Ghee in a pan.
step5 Fry the dal paste with the ground masala and salt.
step6 Mix the wheat flour to a stiff dough with 2 teaspoons ghee, water and salt.
step7 Divide the dough into small portions.
step8 Roll each portion into a ball.
step9 Flatten it in the palm of your hand and put in a little fried dal.
step10 Close up the dough and roll out into a thickish puri.
step11 Deep fry in ghee.

2.PALAK PURI:

Ingredients:

Wheat Flour 2 cups  
Fresh spinach 50 gms.
Ginger paste 1" piece
Cumin seeds 1 tsp.
Chili powder 1 tsp.
Oil 2 tbsps.
oil for deep frying.
Water as required.
Salt as required.

Directions to cook:


step1 First clean and wash the spinach and them boil them with a little water until it becomes tender.
step2 Once tender drain the spinach well and keep aside.
step3 Sift together flour, salt and chili powder and rub in 2 tbsps of ghee or oil.
step4 Add the ginger paste, cumin and spinach and mix thoroughly, pour a little water if necessary to make a stiff dough.
step5 Make the dough uniform for about 10 minutes, cover with a damp cloth and keep aside for 15 mins.
step6 Now divide the dough into 20 balls and roll it into round disc like shape.
step7 Heat oil in a pan until smoking point, then reduce the heat and fry the puris, one at a time.
step8 Serve hot.

3.METHI PURI:

Ingredients:

Wheat Flour 1 cup  
Fenugreek leaves (methi) 1 cup 
Coriander leaves 3 tbsps. 
Turmeric powder a pinch 
Water as required 
Ghee to fry as required 
Salt as required 

Duirections to cook:

step1 Sift the flour and salt and mix the rest of the ingredients with 1 tsp ghee. 
step2 Make a soft dough using water and mix it uniformly and keep it aside for 15 minutes.
step3 Now divide the dough into 20 balls and roll out each ball into a round 4" puri.
step4 Heat ghee in a frying pan and fry 1-2 puris at a time until it turns golden brown.
step5 Serve hot with raita and a vegetable dish.
