Carrot is very good for health. Here are some reasons why we should take carrot.

Carrots are very excellent for improving eye sight. Carrots contain large quantities of vitamin A, in the form of beta carotene. Carrots are also good for the skin.

At least taking one glass of carrot juice a day is very much helpful in maintaining good health. Carrot juice is like a tonic. It will improve the overall health and increases immunity. In fact, two glasses of carrot juice a day can increase your immunity by as much as 70%!

Carrot juice has anti-carcinogen properties. Thus, it helps prevent cancer. It is also believed to have cancer-curing properties.

It is always good to eat whole carrot as many of the nutrients are trapped in the fibre. Fiber always aids digestion, some part of the fibre is indigestible. Thus, you don't get the benefits of the nutrients that are trapped in the indigestible fibre.

Here are some recipes that can be prepared regularly with Carrot.

CARROT  DAL

Carrot Dal is an easy to prepare recipe, which can be taken with rice and roti.

Ingredients:

  1. Two Carrots peeled and chopped in the size of large cubes.
  2. Green chillies – 2, onion – 1 small size.
  3. Mirchi powder - 2 Table spoons
  4. Salt to taste.
  5. Turmeric powder – 1 Tea spoon.
  6. Moong dal – 1 cup.
  7. Jeera, Mustard seeds, black gram, bengal gram, asafoetida – half tea spoon each.
  8. Dry chillies – 2.
  9. Lemon – 1.
  10. Aamchoor powder- 1 Table spoon.
  11. Corriander leaves and curry leaves a little.
  12. Ghee and oil.

Procedure:

  1. Take a bowl with moong dal and shallow fry it.
  2. Now wash the dal and add chopped carrot with 2 cups water to it and make it to boil.
  3. Now add green chillies, chopped onion, turmeric powder, mirchi powder, and boil for some time with lid on it. a
  4. Now cook for some time till dal gets cooked.
  5. Now add aamchoor powder and salt to taste. Keep this dal mixture aside.
  6. Now take another bowl and add 2 table spoons oil and 1 spoon ghee to it.
  7. Add jeera, mustard seeds, gram, bengal gram, asafetida, curry leaves to it.
  8. Now add dal mix and stir for some time till dal gets boiled.
  9. Turn off the stove and add lemon juice to it.
  10. Garnish with coriander leaves and serve.

 

 

CARROT PARATHA

Carrot Paratha can be taken as breakfast and at night time as an supplement for dinner.

Ingredients:

  1. Carrots – 2.
  2. Atta  - 2 cups.
  3. Salt to taste.
  4. Gharam masala – 2 Tea spoons.
  5. Little Oil.
  6. Water, if required.

Procedure:

  1. Peel the skin of carrots and grind them with little water to make a paste.
  2. Take atta in a bowl and add salt, gharam masala to it.
  3. Now add carrot grind to it and mix well.
  4. Add little water if required to make a tight ball to make chapattis.
  5. Take hand full balls and roll the mix to make chapattis out of it.
  6. Now heat the chapattis on pan with little oil.
  7. Serve them hot.

 

 

CARROT BREAD TOAST

Carrot Bread toast is an excellent recipe for breakfast. This is very tasty and easy to prepare.

Ingredients:

  1. Carrot – 2.
  2. Bread – 1 loaf.
  3. Sesame seeds 2-3 table spoons.
  4. Besan powder 1 Table spoon.
  5. Butter 3 - 4 Table spoons.
  6. Oil - 1 table spoon.
  7. Red Mirchi powder 1  Tea spoon.
  8. Salt to taste.

Procedure:

  1. Boil carrots and make paste out of it.
  2. Take a pan and shallow fry sesame seeds and keep aside.
  3. Now take a pan with 1 table spoon oil and add carrot paste, besan powder, salt, mirchi powder and mix them well.
  4. Keep this paste aside to cool it.
  5. Now take bread piece and apply a layer of the carrot paste and sprinkle some sesame seeds on it.
  6. Take another bread piece with little butter on it and sandwich both the bread pieces.
  7. This can be toasted on bread toaster or on the pan.
  8. Serve this hot with tomato sauce if required.
