Kitchen is a place where we would make the preparations to variety of foods in our daily life. Some times we do have a dilemma of what to prepare for the lunch or dinner, when fed up with the regular dishes. Not only that, when we are to host friends or relatives for a meal, we would look for an easy and presentable menu for them. Here is an excellent and easy prepared recipe that can make a prefect meal for your family and the guests.

A complete menu for a meal comprises of the following, in the same order.

1. Soup.

2. Starters.

3. Roti item with curry.

4. Rice Items.

5. Desserts.

SOUP

CORN SOUP

Ingredients:

1. Corn seeds – 2 Table Spoons.

2. Sugar – One Tea Spoon.

3. Corn flour – 1 Table Spoon.

4. Water – 1 and half cup.

5. Salt for taste.

Procedure:

1. Take boiled corn seeds in a blender and blend them such that the corns do not turn to a soft paste.

2. Take water in a bowl and let them boil.

3. Now put the blended seeds in this water and again let it boil for some time.

4. Now add sugar and salt to this.

5. Take some water in another bowl and mix corn flour power and add it to the boiled content.

6. Boil this to get the required consistency, and serve.

STARTER

VEGETABLE SPRING ROLLS

Ingredients:

1. Chopped Cabbage – Half cup.

2. Grated Carrot – Half Cup.

3. Chopped Capsicum – Half Cup.

4. Chopped Green chillies – 2 Table Spoons.

5. Finely chopped Onion – Half Cup.

6. White pepper – 1 Table Spoon.

7. Tasty salt – 1 Table Spoon.

8. Black pepper – 1 Table Spoon.

9. Tomato sauce – 1 Table Spoon.

10. Soya sauce - 1 Table Spoon.

11. Maida – Half Cup.

12. Corn flour – Half Cup.

13. Cooking soda – a pinch.

14. Salt to taste

15. Oil.

Procedure:

1. Take a pan pour 2 table spoons oil, add all chopped vegetable mentioned above and let them half cook.

2. Now add salt, black pepper, white pepper, soya sauce and tomato sauce and mix them well.

3. Keep these vegetables mix aside and let it cool.

4. Now take another bowl and add maida, salt, cooking soda and mix with water to make a chapatti paste.

5. Now take small balls out of the chapatti mix prepared and roll them flat.

6. Keep the vegetables mix inside the chapattis and roll it to cover all the sides.

7. Now deep fry these rolls in oil.

8. Now cut into pieces and garnish with spring onions and carrot pieces.

9. Serve with tomato sauce.

ROTI

BUTTER NAN:

Ingredients:

1. Maida -1 kilogram.

2. Sugar -8 Table spoons.

3. Milk – Half Cup.

4. Curd – Half Cup.

5. Cooking soda - 1 Table Spoon.

6. Ghee – 2 Table Spoons.

7. Warm Water – Optional, only if needed.

Procedure:

1. Take a bowl and all the above stated ingredients and mix well.

2. Add little warm water if needed to make a chapatti ball.

3. Keep this prepared mix aside for about 4 to 5 hours for it to marinate.

4. Now make small balls out of the mix and roll them to prepare chapattis.

5. Now heat the chapatti on a low flame with butter and cover with a lid.

6. Now turn the other side of chapathi and heat it in high flame.

7. After the nan gets cooked on the both sides, remove it and serve.

8. Ur butter nan is ready.

CURRY

PANNER BUTTER MASALA:

Ingredients:

1. Panner - 200 Gms.

2. Gharam masala - 1 Table Spoon.

3. Methi leaves – Half Table Spoon.

4. Tasting salt – 1 Tea Spoon.

5. Ginger garlic paste – 1 Table Spoon.

6. Finely Chopped Tomato -1.

7. Finely Chopped Onion – 1.

8. Green chillies - 3 sliced.

9. Salt to taste.

10. A paste made up of

- Poppy seeds - 2 Table Spoons.

- Coconut piece – Quarter of piece.

- Cashew Nuts - 12 to 15.

11. Red Food Color – 1 Tea Spoon.

12. Finely Coriander leaves – 2 Table Spoons.

13. Butter or Cream – Half Cup.

14. Oil for deep fry, and curry preparation.

15. Water to cook.

Procedure:

1. First cut panner into small piece and make it fry in the oil till the corners of panner turned to light brown.

2. Keep water aside and dip the fried panner in water.

3. In the same pan, fry onions and green chillies until they turn brown then add sliced tomato pieces and again fry.

4. Now add garam masala, ginger garlic paste and the paste that is pre-prepared.

5. Let this to fry for about one minute till all the ingredients cook well.

6. Now take fried panner from water, and press panner pieces and add to curry and strir well for about one minute.

7. Add water and let it cook for 10 -15 minutes.

8. Now add food color (red), tasting salt, methi leaves and coriander leaves.

9. Finally add butter or cream and mix well.

10. Yummy Panner Butter masala is ready. Serve this with Butter on the top.

RICE COURSE:

VEGETABLE FRIED RICE

Ingredients:

1. Chopped Carrot – 1.

2. Finely Chopped Cabbage – Half Cup.

3. Finely Sliced Onion -1.

4. Finely Chopped Beans – 5 to 6.

5. Finely Sliced Capsicum – 1.

6. Tasting Salt – 1 Tea Spoon.

7. Salt to taste.

8. White pepper – Half Table Spoon.

9. Boiled Rice - 2 cups.

10. Oil – 4 Table Spoons.

Procedure:

1. Take a pan with oil in it.

2. Add onions and green chillies; and let them fry for one minute.

3. Now add chopped carrot, cabbage, beans and capsicum.

4. Fry all these vegetables until they are half cooked.

5. Now add tasting salt and white pepper to this, and mix well.

6. Add boiled rice and salt and fry for about 3 minutes.

7. Your vegetable fried rice is ready to serve.

DESSERT

WATERMELON JUICE

Ingredients:

1. Water Melon – Half piece.

2. Sugar - 5 to 6 Table Spoons.

3. Ice Cubes – As required.

Procedure:

1. Cut Water melon into small pieces and remove all the seeds.

2. Add water melon pieces, sugar and ice cubes in a blender and blend them.

3. Using strainer, separate the juice and pulp.

4. Take a serving glass and add the prepared juice and serve this with ice cubes and a piece of watermelon to garnish.
