Preparation time:25 minutes

Cooking time:30 minutes

Serves 4

Items for the pita bread:: 

 1.One cup whole wheat flour (gehun ka atta)

 2.One tbsp crumbled (5 grams) fresh yeast

 3.½ tbsp sugar 

 4.One tbsp oil

 5.½ tbsp salt

Items for the dressing::

 1.Six tbsp fresh thick curds (dahi)

 2.Two cloves garlic,chopped 

 3.¼ cup chopped spring onions (including greens)

 4.A pinch of sugar 

 5.Salt to taste

Items for the patties::

 1.One cup kabuli chana (chick peas),soaked overnight and drained 

 2.½ tbsp chopped green chillies

 3.½ cup chopped mint leaves (phudina)

 4.½ tbsp grated garlic 

 5.½ cup grated cabbage

 6.One cup grated carrot

 7.¼ cup finely chopped capsicum 

 8.½ tbsp roasted cumin seed (jeera) powder 

 9.Salt to taste

Other items::

 1.Oil for deep-frying 

 2.½ cup thinly sliced tomatoes

 3.One cup shredded lettuce

Process for the pita bread::

 A.Combine all the ingredients except the oil in a bowl and using enough water,knead into a soft dough until it is smooth and elastic (approx.5 to 7 minutes).

 B.Add the oil and knead again

 C.Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx.15 to 20 minutes).

 D.Press the dough lightly to remove air and divide into 6 equal parts.

 E.Roll out each portion into circle of 150 mm. (6'') in diameter and 4mm. (1/6'') thickness

 F.Cook on a hot tava (griddle) on each side for a minute or until the bread puffs up.

 G.Remove and keep aside

 H.Cut each pita bread into 2 halves and keep aside.

Process for the dressing::

 A.Blend all the ingredients in a mixer to get a smooth sauce.Keep refrigerated.

Process for the patties::

 A.Combine the kabuli chana,green chillies and mint and blend in mixer to a coarse past without using water.

 B.Add the remaining ingredients and mix well

 C.Divide the mixture into equal parts and shape them into patties.

 D.Deep-fry the patties in hot oil till golden brown in colour.

 E.Drain on absorbent paper and keep aside.

How to proceed::

 A. Warm the pita bread halves on a hot (tava) griddle.

 B.Fill each pita bread half with some tomato slices and shredded lettuce,one patty and a spoonful of the dressing on top.

 C.Repeat for the remaining pita bread halves and other ingredients to make 11 more falafels.
