Ridge gourd – 3

Carrot -2

Capsicum – 1

Ginger – small piece

Fenu Greek seeds -15

White gram –2spoon

Turmeric powder – 1pinch

Mustard seeds – 1spoon

Asafoetida-1 ½ spoons

Dry chili – 6

Green Chili – 4

Coriander – ½ cup

Lemons -2

Oil – 2 spoons

Salt – according to the taste.


  1. Heat oil in a bowl.
  2. Fry fenugreek seeds, white gram, mustard seeds, asafetida dry chili thoroughly.
  3. Now make this fried mixture into powder.
  4. Then chop ridge gourd, carrot, capsicum, coriander in to medium size pieces.
  5. Chop green chili vertically
  6. Now add this chopped vegetable mixture, green chili pieces and the powder we made before .
  7. Then mix them thoroughly and add some lemon juice.
  8. Mix again thoroughly.
  9. There fore ridge gourd pickle is ready.

This is a very easy pickle recipe. Very tasty to eat and colorful to look. We can store this for 2 months. We can have this with chapathi, phulka, idly and many more items especially rice. This very healthy dish as many vegetables are included in this recipe. Every one will like this to eat. Mostly kids love to have this.
