small and round brinjal - 1/4kg
Onions - 2
Ginger garlic paste - 1 tea spoon
curd - 1/2 cup
coconut powder - 2 table spoon
Zeera powder - 1/2 tea spoon
fenu greek seeds powder- 1/4 tea spoon
dhaniya powder - 1table spoon
Groundnuts - 3 table spoon
turmeric powder - 1/4 tea spoon
zeera - 1/4 tea spoon
fenu greek seeds - pinch
curry leaves - 2 stems
salt - according to necessity
coriender - little
oil - 4 table spoons
1. Take Brinjal in a bowl.
2. Cut the brinjal slightly but not fully.
3. Now keep these brinjals in salt water.
4. Now take wide bowl.
5. Add oil in it.
6. Let it heat for some time.
7. Now fry finely chopped onions until they get soften.
8. Now take another bowl.
9. Add some oil and place it on the stove.
10.Let the oil get heated up for some time.
11.Then add groundnuts and sesame seeds.
12.Let them fry for some time.
13.After they get fry then make them into powder.
14.Then add coconut powder,Dhaniya powder, Zeera powder, fenu greek powder, Groundnut powder.
15.Mix all these powders thoroughly.
16.Now add fried onions, turmeric powder,chilli powder, Ginger garlic paste, curd, coriender.
17.Grind them thoroughly.
18.Now take the brinjals from salt water.
19.Then tuff the brinjals with the mixture which we have prepared just now.
20.Now add some more oil in the bowl,
21.Now add zeera and fenu greek seeds.
22.Let them fry completely.
23.Now add these stuffed brinjal and close the bowl with a lid.
24.Then reduce the stove flame.
25.When brinjal get soften then add some water in the left over mixture and add this in the curry.
26.Let the curry get cook until the oil get separated.
27.Therefore brinjal kurma is ready.
