Tomato, the red coloured vegetable abundant with antioxidants used every day, is one among the most wanted items in kitchen and is used in preparation of infinite recipes.  Its health benefits doubles, of course, if served cooked. So I am presenting some simple tomato side dish recipes for you which can be used as a combo with chappathi, roti, naan or appam. Eat tomatoes everyday to stay young and fit.

Simple tomato curry

Ingredients:
Tomato - 4
Onion - 3
Green chillies - 2
Vegetable oil - 2tsp
Salt - As needed
Coriander leaves - A few

How to prepare:
Cut tomato, onion and green chillies to pieces.
Heat oil in a pan and add tomato, green chillies, onion and salt.
Stir well, close the lid and cook it in low flame for 10-12 minutes.
Add coriander leaves and remove from flame.

Simple tomato curry in Chinese style

Ingredients:
Tomato - 4
Onion - 3
Green chillies - 1
Capsicum - half
Ginger-garlic paste - 1 tsp
Tomato sauce - 2-3 tsp
Kashmir chilli powder - 1/4 tsp
Vegetable oil - 2tsp
Salt - As needed
Coriander leaves - A few

Preparation:
Cut tomato, onion and green chillies to pieces.
Heat oil in a pan and add tomato, green chilli, onion, ginger-garlic paste, capsicum and salt. Put it in high flame.
Stir continuously. After 5-7 minutes, add tomato sauce and chilli powder.
Stir continuously (in high flame itself) for one more minute. Add coriander leaves and put the flame off.

Tomato - Egg curry

Ingredients:
Tomato  cut into pieces - 2
Onion (sliced or cut into pieces) - 2
Egg - 1
Green chillies chopped - 1
Coconut oil - 2tsp
Ginger-garlic paste - 1 tsp
Mustard - 1/4 tsp
Turmeric powder - 1/4 tsp
Kashmiri chilli powder - 1/4-1/2 tsp
Fried coriander powder - 1 tsp
Masala powder - 1/4-1/2 tsp
Salt - As needed
Red chillies - 2
Curry leaves - A little
Coriander leaves - A few

Method of preparation:
Heat oil in a pan and add mustard seeds. When it splutters, add red chillies broken into two or three pieces.
When it turns brown, add ginger-garlic paste and curry leaves. Wait till it turns light brown colour.
Add onion, tomato, salt, turmeric powder, chilli powder, coriander powder, green chillies and salt.
Close the lid and allow it to cook in low flame for 10-15 minutes. Stir occasionally.
Break the egg and add it to the tomato curry. Stir well and cook for 5 more minutes. If needed, add a little hot water.
When it boils, add coriander leaves and put the flame off.

Tomato-Egg Coconut curry

Ingredients:
Tomato  cut into pieces - 2
Onion (sliced or cut into pieces) - 2
Egg - 1
Green chillies chopped - 1
Coconut oil - 2tsp
Ginger-garlic paste - 1 tsp
Mustard - 1/4 tsp
Turmeric powder - 1/4 tsp
Kashmiri chilli powder - 1/2 tsp
Fried coriander powder - 1 tsp
Masala powder - 1/4-1/2 tsp
Coconut milk (thick) - 1 1/2 cups.
Salt - As needed
Red chillies - 2
Curry leaves - A little
Coriander leaves - A few

Method of preparation:
Heat oil in a pan and add mustard seeds. When it splutters, add red chillies broken into two or three pieces.
When it turns brown, add ginger-garlic paste and curry leaves. Wait till it turns light brown colour.
Add onion, turmeric powder and green chillies. Cook it till it becomes light brown colour.
Add tomatoes and cook again for a few minutes, till oil gets seperated.
Add chilli powder, coriander powder, masala powder and salt. Stir well and add 1/4 cup water.
Close the lid and let it cook for 5 minutes in low flame.
Break the egg. Add to it and stir continuously for 2-3 minutes.
Add coconut milk and let it just to boil.
Put the flame off and garnish with coriander leaves.

Sodhi curry

Ingredients:
Tomato cut into very small pieces - 2
Cumin seeds - 3/4 tsp
Turmeric powder - 1/4 tsp
Onion cut into very small pieces (big sized) - 1
Curry leaves - A little
Salt - As needed
Oil - 2 tsp
Green chillies - 2 or 3
Coconut milk - 1 cup

Method of preparation:
Heat oil in a pan and add cumin seeds. Let it splutter.
Add turmeric powder and curry leaves and stir continuosly.
Add green chillies and onion and cook till it turns light brown.
Add tomato and cook it for 2-3 minutes.
Add coconut milk and a little more curry leaves and let it boil for 2 or 3 minutes more.
Put the flame off and serve hot.
