The traditional method of making sevai is very difficult and time consuming. You have to soak and dry the rice, grind it ,cook it and make sevai through a sevai maker.Instead of this,

ready made sevai is available in the market.Concorde brand is good one.We can make different varieties of sevai easily with this ready made sevai.

For all the varieties of sevai first prepare the sevai mix as given below.

Sevai Mix:

Ingredients:

  • Sevai - 1 cup
  • Water - 2 cups

Preparation:

Heat the water in vessel. When it is boiled well ( Bubbles will come ) put the sevai to it and wait till sevai is cooked. Then drain the water and put the sevai in a broad vessel to dry.

1. Lemon Sevai:

Ingredients :

  • Lemon - 1
  • Mustard seeds - 1 tbsp
  • Tumeric powder - 1/2 tbsp
  • Urad dal - 1 tbsp
  • Green chillies - 1 to 2
  • Curry leaves
  • Oil - 2 tbsp
  • Salt - As per taste

Preparation time : 10 to 15 minutes

Method:

1. Heat oil in a kadai and add mustard seeds.

2. When the mustard seeds sputters out add urad dhal and fry till it becomes golden brown.

3. Add tumeric powder,green chillies and curry leaves.

4. Take the already prepared sevai and add the above, juice extracted from lemon and needed salt and mix it well.

5. Serve this with coconut chutney.

Note : You can also add cashewnuts fried in ghee if you like.


2. Cocunut Sevai:

Ingredients:

  • Grated cocunut - 1/4 cup
  • Mustard seeds - 1 tbsp
  • Urad dal - 1 tbsp
  • Red chillies - 2
  • Curry leaves
  • Oil - 2 tbsp
  • Salt - As per taste

Preparation time : 10 to 15 minutes

Method:

1. Heat oil in a kadai and add mustard seeds.

2. When the mustard seeds sputters out add urad dhal and fry till it becomes golden brown.

3. Add red chillies and curry leaves.

4. Take the already prepared sevai and add the above and needed salt and mix it well.

5. Serve this with coconut chutney.

Note : You can also add groudnut if you like.


3. Pepper Sevai:

Ingredients:

  • Pepper powder - 1 tbsp
  • Cumin seeds powder - 2 tbsp
  • Mustard seeds - 1 tbsp
  • Curry leaves
  • Oil - 2 tbsp
  • Salt - As per taste

Preparation time : 10 to 15 minutes

Method:

1. Heat oil in a kadai and add mustard seeds.

2. When the mustard seeds sputters add curry leaves.

3. Take the already prepared sevai and add the above, pepper powder, cumin seeds powder and needed salt and mix it well.


4. Tomato Sevai:

Ingredients:

  • Tomato - 1 ( sliced long and thin )
  • Big Onion - 1 ( sliced long and thin )
  • Mustard seeds - 1 tbsp
  • Urad dal - 1 tbsp
  • Bengal gram dhal / chana dhal - 1 tbsp
  • Green chillies - 1 to 2
  • Curry leaves
  • Oil - 2 tbsp
  • Salt - As per taste

Preparation time : 10 to 15 minutes

Method:

1. Heat oil in a kadai and add mustard seeds.

2. When the mustard seeds sputters out add urad dhal and bengal gram dhal and fry till it becomes golden brown.

3. Add green chillies and curry leaves.

4. Add the sliced onion and fry till it becomes soft.

5. Add the sliced tomato and fry till it becomes soft.

6. Take the already prepared sevai and add the above, needed salt and mix it well.


5.Curd Sevai:

Ingredients:

  • Curd - 1/2 cup
  • Mustard seeds - 1 tbsp
  • Urad dal - 1 tbsp
  • Green chillies - 1 to 2
  • Curry leaves
  • Coriander leaves
  • Grated Ginger - little
  • Oil - 2 tbsp
  • Salt - As per taste

Preparation time : 10 to 15 minutes

Method:

1. Heat oil in a kadai and add mustard seeds.

2. When the mustard seeds sputters out add urad dhal and fry till it becomes golden brown

3. Add green chillies , ginger and curry leaves.

4. Take the already prepared sevai and add the above, curd, needed salt and mix it well.

5. Garnish with coriander leaves and serve.

Note : You can also garnish with pomegranate.
