If you are having a buffer instead of the sit-down dinner, you can easily skip the kochuri and daal/alur dom/whatever, which only hardcore fans like me would enjoy.

Instead start from the next set of food, skip fried fish as in cutlets and batter fries, I feel that smoked/steamed fish are better and definately more exotic. You can have a cold salad to go with that.And chicken reshmi kabab (as in Amber hotel style) as the second choice. You could even have a skewered veggies with paneer cubes for vegetarians.

Have a rice dish, like a simple pulao without dry fruits but with a hint of real kesar, rizala.. Dont know f you can manage this but Anarkali Hotel near New Market has this heavenly simple mutton curry which is lighter than a rezaalaa.I have been also hearing this recipe called daab chingri, check if there's a fish based version to it. For veggies you can add a Navratna curry.Or a trditional simple chanaar torkaari not paneer curry.

Then chatni with papad, followed 'icecream' sandesh or any other cold base sandesh, rosogolla by a good shop like Ganguraam. And finally melt-in-the-mouth mishti paan wrapped in silver foil kept on blocks of ice.
