I enjoy eating Omelette stuffed with chopped tomato and onion whenever I am in hurry because it takes a little time to cook and is tastier than the simple omelette. It can be taken without anything or an additional flavour of Mint chutney and tomato sauce.

Ingredients:

four eggs

two tomatoes; regular size (shouldn't be over ripe)

one onion: small size

salt to taste

coriander leaves

Cooking equipment: two bowls, spoon, spatula, frypan shallow, cooking stove

Break the four eggs into bowl

discard the egg shells

take out the yolks with a spoon into another bowl

chop tomatoes and onion into small pieces into the bowl in which yolks have been kept

mix yolks, chopped onion and tomatoes thorughly

mix salt (to taste) thoroughly

Beat the egg whites with little salt

put a spoon of cooking oil on the frypan

let it heat properly

now pour half the beaten egg white material on the hot cooking oil and spread it

get it cooked for a minute

then add the mixture of yolks, chopped onion and tomatoes

Spread the mixture leaving the edges of omellete below

now spread the left out beaten egg white material

Put the spatula under the first omelette layer and invert it immediately

Let it cook for five minutes in low heat

The omelette stuffed with tomatoes and onion is ready

Garnish it with green coriander leaves

Enjoy it with mint chutney or tomato suace as you like
