That seems really delicious. Though sadly I never tasted stuffed makai palak parathas.
Rotis or chapatis is major food item in North India. Normally, chaptis are made of wheat flour (atta). But there are other types of chapatis also. There are also tandoori and Rumali rotis. More in the link below:

Roti made with Jowar (Jonnalu in Telugu) is a regular item in Telagana and Rayala Seema of AP, where rice is not an abundant crop. It's hard to digest, but ideal for the farmers who toil. It's gluten free.
