You are right. There should be a gap of at least one hour between your last meal and going to bed.Ayurveda says not to eat up to the neck. One should leave some gap in the stomach to enable the digestive juices work.

Yes. Breakfast is the most important meal in the day, It should contain all the essential nutrients, preferably Vegetables, pulses and nuts, so that a breakfast could make you to face all the rigors of the remaining day. Of course lunch and dinner should be light, especially dinner. One should use buttermilk during dinner.

An old adage says "eat breakfast like a king, lunch like a prince and dinner like a pauper". Never skip your breakfast. Breakfast is the most important food. When you consume more calories including some extra protein for your breakfast, you will feel better in the whole day. But some people cannot eat their breakfast in time because they eat too much quantity of food at night. If you want a healthy and fit body, your dinner must be very simple. Eat three hours before you go to bed.  Otherwise, your body won't digest the food that you eat.

Dinner must be simple and and less in quantity. Because, people tend to go to bed immediately after Dinner. It's different during day time. There will be some kind of activity and there will not be any difficulty in digesting the food.
