Thuvaiyal is a tamil word. I don't know the equivalent english word. Thuvaiyal can be used as a side dish as well as can be mixed with rice and eaten.

1. Coconut Thuvaiyal


Ingredients:

  • Grated coconut - 2 cups
  • Tamarind - size of lemon
  • Red chillies - 5 to 6
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste



Method:

1. Heat oil in a pan and fry urad dhal and red chillies till urad dhal becomes golden brown and allow it to cool.

2. First grind tamarind, salt and red chillies by adding little water to a nice paste in a mixie.

3. Then add grated coconut , asafoetida powder and urad dhal and grind it to a paste ( not very fine and not coarse )


Note : If you want more spice add 2 or 3 chillies more.



2. Yam Thuvaiyal


Ingredients:

  • Yam - 1
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Remove the skin of yam , cut it to fine pieces and wash 3 or 4 times as sand will be there.

2. Heat oil in a pan and fry mustard seeds.

3. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

4. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

5. Then add  urad dhal, mustard seeds and yam after draining water from it and grind it to a fine paste.


3. Plantain flower Thuvaiyal


Ingredients:

  • Plantain flower - 1
  • Tumeric powder - 1 tsp
  • Tamarind - size of lemon
  • Red chillies - 10 to 12
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Remove the plantain flowers and cut it to pieces.

2. Mix tumeric powder in water and put the flowers in it and cook it well.

3. Then drain the water from it and keep it aside.

4. Heat oil in a pan and fry mustard seeds.

5. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

6. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

7. Then add  urad dhal, mustard seeds and plantain flower and grind it to a fine paste.



4. Brinjal Thuvaiyal


Ingredients:


  • Brinjal - 5 to 6
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Fry the brinjal in flame and remove its skin.

2. Heat oil in a pan and fry mustard seeds.

3. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

4. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

5. Then add  urad dhal, mustard seeds and  brinjal and grind it to a fine paste.



5. Onion Thuvaiyal


Ingredients:

  • Onion - 5 to 6
  • Tamarind - size of lemon
  • Red chillies - 10 to 11
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Cut the onion to fine pieces.

2. Heat oil in a pan and fry onion till it turns golden brown.

3. Heat oil in a pan and fry mustard seeds.

4. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

5. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.|

6. Then add  urad dhal, mustard seeds and  brinjal and grind it to a fine paste.

6. Coriander leaves Thuvaiyal


Ingredients:


  • Coriander - 4 bundles
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Remove the leaves from corainder and wash it cleanly.

2. Heat oil in a pan and fry mustard seeds.

3. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

4. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

5. Then add  urad dhal, mustard seeds and  coriander leaves and grind it to a fine paste.


7. Mint leaves Thuvaiyal


Ingredients:

  • Mint leaves - 1 bundle
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Seperate the leaves and stick of mint and wash it cleanly.

2.  Heat oil in a pan and fry mustard seeds.

3. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

4. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

5. Then add  urad dhal, mustard seeds and  mint leaves and grind it to a fine paste.


8. Orange skin Thuvaiyal


Ingredients:


  • Skin of Orange  - 250g
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1. Heat oil in a pan and fry the skin of orange for sometime and allow it to cool.

2.  Heat oil in a pan and fry mustard seeds.

3. When mustard seeds sputters out add  urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

4. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

5. Then add  urad dhal, mustard seeds and  mint leaves and grind it to a fine paste.


9. Coriander seeds Thuvaiyal


Ingredients:

  • Coriander seeds  - 250g
  • Tamarind - size of lemon
  • Red chillies - 7 to 8
  • Mustard seeds - 1 tsp
  • Pepper - 1 tsp
  • Urad dhal - 3 tsp
  • Asafoetida powder - little
  • Oil - As per need
  • Salt - As per taste


Method:

1.  Heat oil in a pan and fry mustard seeds.

2. When mustard seeds sputters out add  coriander seeds, pepper, urad dhal and red chillies and fry it till urad dhal becomes golden brown and allow it to cool.

3. First grind tamarind, salt , asafoetida powder and red chillies by adding little water to a nice paste in a mixie.

4. Then add  urad dhal, pepper, coriander seeds and mustard seeds and  grind it to a fine paste.
