Irrespective of whether working or a home maker a constant thread that runs in the minds of all mothers is to provide healthy and a nutritious food to their kids.Though there are some deadlines,schedules and commitments to be honoured, mother's mind gives top most precedence to the preparation of food menu for their kids in the forthcoming week.Monday fever is not only for kids but it is also applicable for a mother because everyday she has to introduce new variety of foods to her kids.Hello Friends, being a mother I thought that I could help you a bit by sharing my two cents.This is the schedule I follow for my kid ever monday. BreakFast : Palak Dosa Ingredients: Boiled Rice - 1 cup Raw Rice - 1 cup Urad Dal - 1/4 cup Palak - 1 cup Green chillies - 1 to 2 Jeera - 1 tea spoon Oil - as required Salt - as required Method of Preparation: 1.Boiled rice, Raw rice and the Urad dal must be washed thoroughly two to three times. 2.Soak the boiled rice,raw rice and the urad dal seperately for two hours. 3.Grind the boiled rice, raw rice and urad dal seperately. 4.The urad dal must be ground to a fine paste. 5.The boiled rice and the raw rice must be ground to a coarse paste. 6.Use your hands to mix the fine paste and the coarse paste and then add salt.Keep it aside. 7.The palak leaves must be washed thoroughly in running water to remove the dirt and chemicals. 8.Boil the palak leaves in hot water in a vessel with lid uncovered.Also, do not over cook palak as it may lose its nutrients. 9.Grind the boiled palak leaves, jeera seeds and the chopped green chillies in to a fine paste. 10.Mix the palak paste with the dosa batter which was prepared earlier. 11.Grease the tawa with oil and start preparing dosas. 12.The delicious "Palak Dosa" is ready to eat. 13.This "Palak Dosa" will go good with Hot and sweet tomato chilli sauce. Benefits of Palak: Palak contains calcium and magnesium.Palak is very good for kids and toddlers who suffer from Constipation.It is always good to add any grean leafy vegetable in the foodmenu.The essential nutrients for children and Women are Iron and Calcium.It is abundantly found in Palak. Tips: It is always good to replace palak with methi and other green leafy vegetables as children are always fond of varities. Lunch : Green Peas Vegetable rice Ingredients Basmathi rice - 1 cup Green peas - 1/4 cup Onion - 1 Capsicum - 1 Green Chillies - 2 Pudina - 2 tea spoon Corriander - 2 tea spoon Salt - as required Ghee - as required Method of preparation: 1. Wash all the vegetables in running water to remove dirt and chemicals. 2.The propotion of water and basmathi rice is always 2:1. In a cooker add one cup of basmathi rice and two cups of water.Wait for two to three whistles and turn off the flame. 3.Cut the Onion and Capsicum length wise.Slit the green chillies. 4.Add little ghee in to the frying pan and once it becomes hot add the chopped onion and capsicum and the slit green chillies. 5.Cook the vegetables in low flame for 10 to 12 minutes. Add the required salt. 6.When the vegetables are cooked,add pudina leaves to it and turn off the flame. 7.Mix the cooked rice with the prepared mixture, sprinkle some chopped corriander leaves and the "Green Peas Vegetable Rice" is ready to eat. Benefits of Green Peas: Green peas is rich in iron content.Iron deficiency results in anemia and decreased immunity.When the immunity is decreased, children tend to take more leave and they will not be able to cope up with the studies.So, it is the duty of the mother to include green peas in the food menu atleast twice a week. Benefits of Capsicum: Capsicum is rich in Vitamin A and Vitamin C.Both the vitamins are powerful antioxidants.Capsicum is good for eyes as it also contains beta-carotene. Tips: Capsicums are available in three exotic colours green,yellow and red.Use the capsicums alternatively as children are so much fond of bright colours. Evening Snacks: Corn delight: Ingredients: Corn -1 cup Lemon -1 tea spoon Red chillies -1 Mustard seeds -1 tea spoon Broken Urad dal -1 tea spoon Corriander leaves -1 tea spoon Oil - as required Method of preparation: 1. Pressure cook the corn with water and salt and use a corn peeler to peel off the corn. 2. Heat oil in the tawa and add mustard seeds and the broken urad dal. 3. Let the mustard seeds and the broken urad dal splutter. 4. Add the red chillies, saute it for a minute or two. 5. Add the boiled corn to the tadka, and add a spoon of lemon juice to the mixture. 6. Decorate it with freshly chopped corriander leaves. 7. The yummy "Corn Delight" is ready to eat. Benefits of Corn: Corn is rich in fiber.It helps to avoid Constipation. Dinner: TriColour Utthappam: Ingredients: Dosa Batter - as required Chopped Onion -3 tea spoon Chopped tomato - 3 tea spoon Chopped green chillies - 1 tea spoon Chopped corriander -1 tea spoon Ghee - as required Method of Preparation: 1. Grease the tawa with ghee and start preparing dosas. 2. Make the dosas bit thick than the usual dosas. 3. Sprinkle the chopped onion, chopped tomato,chopped green chillies and the chopped corriander leaves over the dosa. 4. Cook the dosa on both the sides on low flame. 5. The yummy "Tricolour utthappam" is ready to eat. It is good to supplement this food menu with a glass of milk in both morning and evening times as milk is essential for the growth of toddlers.Hope, you find this article interesting!!!
