1. Corn Pulao

Ingredients:

  • Corn - 1 cup
  • Rice - 2 cups
  • Onion (big) - 2
  • Garlic - 2 teeths
  • Tomato sauce - 1 cup
  • Oil - As per need
  • Salt - As per taste
  • Brinji leaf - 2

 

To grind:

  • Red chilles - 4 to 5
  • Grated coconut - 2 tsp
  • Onion - 1
  • Cinnamon - 1
  • Aniseed - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Curry leaves - little
  • Salt - 1 tsp

 

Method:

 

1. Soak corn for 3 hours.

2. Cut onion to thin long slices.

3. Mix corn with tomato sauce and cook it.

4. Wash the rice 2 to 3 times and cook it seperately by adding 2 cups of water.

5. Grind together the ingredients listed in "To grind".

6. Heat oil in  a pan and fry onion, ginger and brinji leaves

7. Add the cooked corn and grinded paste and fry till the green smell goes.

8. Mix this with rice and serve with pototo kurma or onion raitha.

 

2.Corn Halwa

 

Ingredients:

  • Corn - 1 cup
  • Cashewnut seeds - 50g
  • Sugar - 3/4 cup
  • Ghee - 1 tsp
  • Dried graps - little
  • Milk - little

 

Method:

 

1. Grind the corn by adding little milk to a fine paste in a mixie.

2. Mix the grinded paste and sugar and fry it in a pan. Fry continuously using the spoon otherwise halwa is stick to the vessel and will become very hard.

Also keep the stove in low flame.

3.  When the paste becomes little hard, add ghee to it and fry for few minutes and then remove it from the stove.

4.  Fry the cashewnuts in ghee and add to the halwa.

5. Add the dried grapes and mix it well.

 

3. Corn cutlet

 

Ingredients:

  • Corn -  1 cup
  • Maida flour - 3/4 cup
  • Green chillies - 4 to 5
  • Onion (big) - 2
  • Carrot  - 1
  • Potato - 3
  • Oil - As per need
  • Salt - As per taste

 

Method:

 

1. Cut the carrot to thin slices using a shredder.

2. Cut onion and green chillies to small pieces.

3. Cook the potatoes and remove its skin.

4. Fry maida flour in an empty pan and mix corn, green chillies and salt.

5. Heat oil in a pan and fry onion and carrot and allow it to cool.

6. Smash the potatoes finely.

7. Add onion, carrot, potatoes to the maida flour mix already prepared and make it to a dough by adding little water.

8. Take little flour from the dough and make it like  a flat  round shaped pappad using your hands.

9.  Cook the cutlet on both sides by putting it in a dosa pan
