Milk turns sour for a number of reasons, BUT what turns the milk sour is the lactose or the lactic acid in the milk. Lactose is a naturally-occurring acid in all living organisms and food by-products.

Most foods have a “shelf life”. All milk has a “shelf life”. This is the time period milk remains nourishing and usable. Once the milk goes beyond that shelf life, it begins to break down and deteriorate.

If milk is left at room temperature too long, bacteria are allowed to grow and multiply. The milk sours.

If milk is left in the refrigerator too long, bacteria are allowed to grow and multiply. The milk sours.
